This hands-on introduction will include basic knife and cooking techniques such as sautéing, poaching, broiling and pureeing along with sanitation guidelines, measurements and ingredients. Start with chicken stock and move on to minestrone and a broccoli cheddar soup and a hearty seafood stew. We’ll braise short ribs and pork, make fresh pasta and sauté chicken with different ingredients. Our final class pulls it all together as we create a dinner party from soup to nuts. This elegant four course meal includes an antipasto platter, New England salad, balsamic and peach pork tenderloin and a mixed berry crisp. Tuition includes food.
Moira Rascati is a graduate of the Culinary Institute of America in NY and has been a sous-chef at Joseph’s by the Sea for the past 25 years. She has taught at SMCC for 12 years.
