This hands-on introduction will include basic knife and cooking techniques: sautÈing, poaching, broiling, grilling and pureeing; sanitation guidelines, measurements, and ingredients. Start with a basic chicken broth and move to chicken noodle soup, beef barley and Southwest chili. Build on your new skills to create mouthwatering stir-fried pork, beef stroganoff, and chicken marsala. Our final class pulls it all together as we create a dinner party from soup to nuts. This elegant four course meal includes: antipasto platter, New England salad, German-style stuffed pork tenderloin and a mixed berry crisp. Tuition includes food. No class February 21st.
